Oops. I made a mistake. And from Saturday afternoon until Tuesday afternoon, you all let me know about it through emails and phone calls.
Yes, I have made mistakes before, but never one exactly like this. You see, I take homegrown tomatoes seriously. Frankly, I get really excited about homegrown tomatoes, especially ones from our backyard. Yes, everything about a homegrown tomato should be taken seriously.
Last week I shared the ingredients and amounts of each to make Heather’s Southern Tomato Pie. However, I left out how to put the pie together. Please forgive me.
Southern Tomato Pie Take 2
5 large tomatoes, peeled and sliced
½ tsp salt
½ tsp pepper
¾ cup shredded sharp cheddar
¾ cup shredded Mozzarella
3 tsp chopped Basil
6 strips of bacon
Garlic powder to taste
1 tsp. parsley
1 cup Mayonnaise
9-inch pie crust
Bake pie shell 10 minutes at 375 degrees
Layer tomatoes
Sprinkle with salt, pepper, basil, garlic powder and parsley
Mix mayo, cheeses and spread on top
Bake at 350 degrees for 30 minutes
Add cooked crumbled bacon on top before serving
