Another summer treat

Whew! I don’t know about y’all but it seems like we’ve had a lot going on this summer. Nothing new just a thing called life.

I’ve been seeing the blackberries in the vines above our driveway. Then the memories flood my mind of the carefree summer days of my childhood. Running around barefooted from Monday mornings until Wednesday evening church service and then my feet were free again until Sunday morning church time.

Yep, all it takes are a few berries on the vine to remind me about the fresh blackberry picking with Granny Goss along with all of my three siblings and my four cousins who lived next door. After the berry picking, we all helped Granny make blackberry jam and a pan of delicious biscuits too. (I don’t think she could have done it without us.)

Oh, I can almost smell that jam now along with the pan of hot biscuits. It was a struggle for all of us kids to wait until the biscuits were cool enough to hold.

Quickly, we’d spread in the butter and warm blackberry jam until it both oozed from the sides. Oh, my goodness gracious, I wonder sometimes if I could only go back there for a visit. It would be so great and truthfully it was then and even today for just a little bit I was there, with jam and butter smeared upon my face along with my siblings and cousins too.

The memories were almost as precious and tasty as the blackberry jam. Love to all my dearest friends.

Squash Dressing

3 cups squash (cleaned from any debris; ends removed then cut into medium size rounds)

2 tablespoons butter

1 small to medium size onion chopped

One can (10 oz.) of chicken soup

1 cup chicken broth

1 cup buttermilk

1 teaspoon salt

1 teaspoon black pepper

5 cups of already cooked cornbread crumbled

Pre-heat oven to 350 degrees and lightly sprayed or greased 9x13x2 inch baking dish. Set aside.

Place prepared squash in a medium size microwave-safe bowl and cover with water; set timer for 15 minutes. Stir and check squash then continue microwaving until squash is tender, drain squash in colander, draining well.

Return drained squash to bowl, add onion, chicken soup, broth, buttermilk, salt, pepper and cornbread, stir to blend all together well.

Pour into prepared baking dish. Bake at 350 degrees for 30 to 35 minutes or until hot, bubbly and browned.
