This week K.C and I will celebrate 45 years of marriage. Yes, I am married to a wonderful man, a really good man. I realize that I’m a blessed woman to know that he truly loves me, not because he tells me many times during the day.
But he shows me in so many ways. I was thinking about the meaning of love and to me our love is like a brilliant, one of a kind diamond. It shines in many ways. We have a commitment to each other, we do things for each other not because we have to, but because we want to serve each other, and in a way to clear the path before the other so there is nothing to hinder our walk together.
We try to cherish each moment we have together. It doesn’t matter if it’s stringing and breaking green beans that we are going to can or it can be having a water, banana and peanut butter break when K.C.’s doing yard work. Our love has held us together during great times of joy and even more so during times of pain and sorrow and disappointments of life.
K.C. is my best friend, he listens to me ... well, sometimes he does. Our love has a great foundation and that is JESUS CHRIST; with him as our mediator we will make it. Our love started the day we met. To have and to hold from this day forth, to love and cherish our love story continues. LOVE TO ALL my dearest friends.

K.C.’s Favorite Overnight Oatmeal Buttermilk Pancakes
2 cups quick or minute oatmeal
½ cup self-rising flour
1 teaspoon vanilla
½ stick melted butter
1-1/2 teaspoon sugar (optional)
2 cups buttermilk
2 eggs
Extra buttermilk (only as much as is needed)
In a medium size bowl place oatmeal, flour, vanilla, melted butter, sugar and buttermilk; using a fork mix all ingredients until well blended.
Cover bowl and refrigerate overnight. In the morning remove bowl from refrigerator and add 2 eggs, and a little more buttermilk, only as much as needed to have pancake-like batter.
Mix well. Using a 1/3 cup measure place batter onto hot buttered griddle; when bubbles appear on top carefully flip over cooking thoroughly.
Serve with warm syrup and fruit if desired. Extra pancakes freeze well.
