I’ve been thinking about all the seasonal foods we enjoy this time of the year. You know we have yummy sweet potatoes, pumpkins, and all kinds of fresh greens and oh they are all so good. What about fresh cranberries?
I’m pretty sure that I told y’all before so I don’t really have to tell you all again just how much that love fresh cranberries. I love them in just about anything and when you mix them with oranges, then it’s “Katie, bar the door,” as I’ve heard many old timers say.
However, with that said, now I’m wondering just what it means. Well, I had to look up the meaning, and it means watch out, take precaution. In my words it could mean, just possibly that someone who may or might want to take my fresh cranberries away. So I’m going to be watching and keeping my eyes wide open for anyone that looks like they are coming for my cranberries. By the way, I’m just kidding if you want some, I’ll share. I’m working on a recipe for guess what? Fresh cranberries and Orange Pancakes, I’ll be sure to let y’all know when I get it perfected and ready for you to try. Love to all my dearest friends!

Fresh Cranberry Orange Salad
• 1 package fresh cranberries
• 1 or 2 apples of your choice cut in chopped to bite size pieces
• 5 to 6 tablespoons granulated sugar (you may prefer sweeter taste)
• 1 large whole orange (cut ends off and then cut in half, remove any seeds. Process the whole orange that has been cut in chunk pieces)
• 1 cup pecans chopped
• 1 small package strawberry gelatin or other red flavor desire
• 1 cup boiling water
• 1 cup cold water
• 1 to 2 cups miniature marshmallows (optional)
First look over the fresh cranberries; discard any bad ones; then place the remaining fresh cranberries in food processor and process to your desire texture. Place the processed cranberries in a medium size bowl add chopped apples, sugar, processed whole orange and chopped pecans, stir well to blend, set aside. In a separate small bowl place the hot water, add in gelatin and stir well until gelatin is dissolved stir in cold water then set gelatin aside to cool about 15 minutes. Then stir into the fresh cranberry orange mixture. Add marshmallows if using; this is not a set firm jelled salad. Place in serving bowl and refrigerate until ready to serve. Keep leftovers refrigerate.
