Riddle me this, onion lovers

Friends, put on your thinking cap and join me for a riddle. See if you can figure out whom or rather what this is. I’ll use the term “she” as my friend, so join me and let’s have fun.

Our friendship started in my childhood. I learned early on that sometimes she could be strong. My family became friends with her as well. When K.C. and I met, he could take her or leave her, yet she comes by so often that he’s OK with her now.

Most of the time she’s right there in the kitchen, helping me when I’m cooking. She loves to go along to our fellowship gatherings. Almost everyone loves for her to come along. Of course, there are “those” who have never liked her and some have even commented on the way she smells. I sure hope she hasn’t heard that.

Truthfully, when some of her relatives have visited they even gave me a headache. As easy-going as K.C. is, he has made it clear that he doesn’t want her relatives coming to visit. He says they are too loud. I think she’s sweet, so I think our friendship will continue for now.

I just have to say this – oh my goodness y’all, these onion patties are just so, so good. For anyone that also likes onions and even more so when they are cooked, then you are in for treat. Maybe I didn’t use the right word when I said treat because a treat sounds like something maybe sweet as in a dessert. Anyway these onion patties would be really good with a plate of fresh garden cooked vegetables, like green beans, fried okra, and squash. Let me just say that they are light and so delicate.

Onion Patties

3/4 cup all-purpose flour

2 teaspoons baking powder

1 teaspoon sugar “optional”

½ teaspoon salt

2 tablespoon self-rising cornmeal

3/4 cup buttermilk

About 2 cups finely chopped onions

Vegetable oil

Place about 3 tablespoons vegetable oil in a large skillet. Heating skillet to medium heat.

In a medium size bowl place flour, baking powder, sugar, salt, and cornmeal. Stir well to blend dry ingredients together, add buttermilk, blending, and add onions mixing until covered with batter. Drop large spoon-size batter into heated oil. Cook patties until browned on underside; carefully turn patty; cooking on each side. Place on a paper towel lined plate to drain. Refrigerate leftovers; they reheat well in the microwave.
