Today’s recipe is one that I’ve had for several years. The recipe was given to me from one of K.C.’s cousins. We were visiting in their home and she had prepared these tasty muffins; she kept saying how easy they were to make, so of course I just had to ask for the recipe and I’ve been making them on and off ever since.
As you all have learned, I just love to try things my way. I have tried these muffins with adding fresh and frozen blueberries. Whoa, I was just thinking and begin to question in my mind as I was writing this column; (hum?) what about adding some fresh chopped apple with a little sprinkling of cinnamon to this muffin batter. Hold on I’ll be right back after this short break. Well, I’m back now so I’ll share the results of adding one chopped apple and about one teaspoon of cinnamon to this batter.
Good, although there was a slight problem – the apple that I used was a sweet golden delicious and although you could taste the apple flavor. The apple was totally cooked into the muffin. In other words, if you were going to add a chopped apple to this batter you would need an apple that wouldn’t totally cook into the batter and never be seen again; an apple that could stand the heat of baking and show its presence in the finished muffin. My thoughts, yes adding an apple and cinnamon will be perfect; just make sure it’s a stronger apple like a Granny Smith. I believe that would be perfect. Love to all my dearest friends.

Sweet Muffins
1 egg
1/2 cup milk
1/4 cup vegetable oil
1/2 cup sugar
1-1/2 cups self-rising flour
Optional: Add in’s
1-1/2 peeled and chopped Granny Smith apples
1 teaspoon cinnamon
Pre-heat oven to 350 degrees. Spray or lightly grease a 12 section “regular size” muffin pan. Set pan aside while preparing batter.
In a medium size bowl place egg and whisk then add in, milk, vegetable oil, and sugar mixing well with a whisk to blend all ingredients together add in flour and mix again just until flour is blended into batter.
Just fold in Optional chopped apple and cinnamon, mix well. Divide batter evenly into each muffin cup, bake at 350 degrees for about 18 to 20 minutes.
Test center of muffins with a knife and the knife should come out clean when muffins are baked.
