Recently I made this Strawberry Lemonade and asked the senior adult group of our church to taste test it. The results were they kept asking for another sample.
OK, time for a short rabbit trail here. Several years ago K.C. and I were leaders over the senior adult group in another church we attended. We were younger then. Now the church where we are members, I’m a helper with the senior adults and K.C. is a member of the actual group. OK, I am a helper and a member too. Goodness gracious I just admitted that I’m a senior adult. Yes, there are days my body screams it and my mind just can’t believe it. However, with that said I plan on celebrating another birthday in just a few days and I’m so thankful for all God’s blessings to me. Oh no folks, I’ve just been interrupted by K.C. and he wants to finish my column. Hey folks this is K.C. here, I just want to say Happy Birthday to my beautiful wife and best friend. May you all be blessed greatly and as Lois always says, Love to all our dearest friends.

Fresh Strawberry Lemonade
1 cup fresh strawberries cleaned and stems removed, and sliced in half (Measure after cutting in half)
– According to sweetness of berries add 1 tablespoon sugar (more if desired, if so add 2 tablespoons of sugar, then process in blender or food processor and pour through a strainer over a large bowl. Lightly mash the berries so that they release the strawberry juices into bowl. Use a spoon to scrape all strawberry juice from bottom of strainer into the bowl, then leave the strainer over bowl to allow juices to continue dripping into bowl. Add the juice of 2 fresh squeezed lemons.
Simple Syrup
1 cup water
Zest of 2 lemons
1/4 plus 1 to 2 tablespoons of granulated sugar
In a small sauce pan place water, lemon zest, and sugar, heat over medium heat stirring just until sugar has dissolved and syrup has simmered. Remove from heat and set aside about 2 minutes; then add in 2 cups of ice cubes. After ice has melted pour mixture through strainer lightly pressing mashed strawberries, again scrape the bottom of strainer to get all the juices. Remove strainer and pour strawberry lemonade into a pitcher and serve if desired over ice cubes. Oh, this is so good and refreshing.
For garnish: Fresh strawberries and lemon slices; add to each serving of strawberry lemonade.
